description: Present research project is aimed to investigate natural bioactive compounds in order to outline their chemical and physiological characteristics and to create the scientific basis for further practical use of functional plant components in food items. This study includes:
-extraction of biological active compounds (terpenes, flavonoids etc)
- fractionation and characterisation of natural substances responsible for physiological activity (antioxidative properties, for example)
- preparation of encapsulated biologically active compounds
- investigation of stabilising effects to enhance thermal stability of bioactive compounds
- optimisation of food processing parameters to maintain bioactivity of functional supplements
